| Abstract Environmental policy performance studies should pay more attention to the package of policy instruments applied rather than concentrate on single policy instruments or policy institutions.Therefore this paper develops a policy typology. Its value is tested in a comparative analysis of organic food policies in Denmark, Sweden, the UK and the US and of their impact on organic food consumption. Our analysis demonstrates that cross‐country variation in organic food consumption is explained by differences in the packages of policy instruments applied, controlling for almost every relevant systemic and individual level alternative explanation found in the literature of environmental performance. | Values are at the centre of organic farming. The paper examines ethical concerns that are important to consumers, producers and other stakeholders in relation to organic farming practice and how this relates to current standards and the four IFOAM principles of health, ecology, fairness and care. Most concerns can be categorised under four headings but important issues are cross cutting. Currently, standards cover, both directly and indirectly, only a part of ethical values associated with organic food and agriculture but many producers aim to deliver on a broader range. |

Why ban GMOs when they are the only tool to secure the world’s future need for food? They are more efficient, quicker, etc!” When asked these questions I explain the underlying values of organic agriculture. In this article I will discuss the basic values of organic agriculture as laid down in the IFOAM four basic principles, and will relate them to the field of plant breeding.
